Deirdre's Chocolate Brownie

Lily's Butternut Squash and Coconut Soup
Ingredients:
🍠 Sweet potato soup recipe 🍠
Ingredients:
1 white onion
2 cloves garlic
1 thumb ginger
3-4 sweet potatoes
1 tin coconut milk
Vegetable stock
1 lime
Method:
1. Fry chopped onion in a little olive oil or coconut oil for a few minutes. Add chopped garlic and onion until all are soft.
2. Add chopped and peeled sweet potatoes (2cm chunks) to the pan and fry for 8 mins.
3. Add coconut milk and 1/2 tin of vegetable stock. Stir and once boiling, bring down to a simmer and put a lid on the pan. Cook til sweet potato is soft.
4. Blend in a food processor until smooth and return to the pan. Grate in lime rind and squeeze in juice of half the lime. Add seasoning as required (salt, pepper, more lime juice, chilli flakes).
5. Enjoy!
Sabry's Multi-seeded + Sultana's wholemeal bread
Add to the above 60gr. of Sultana or Raisin + 60 gr. of a mix of sunflowers + pumpkin seeds (soaked for 10 mins in hot water). Enjoy!
